Water Spinach botanically called Ipomea aquatica, Locally recognized as kolu anae soppu, good for health and have better in taste . Seasonal leaves only available during special times in a year.

Best ever dish by it us mashed leaves sambar by adding tempering mustard,chilli,garlic curry leaves 4-5 and imli water to the mashed leaves.

Cut 2 pc onion, 1pc tomato, peel 4-5 garlic and add all this along with clean chop leaves of Ipomea, then pressure cook it.

Later after cooling, mash or grind the steamed stuff, later take a tempering mustard, dry chilli, garlic, curry leaves as we regular do tempering for other dishes.

Mix well and add imli water (soak and extract) to it. Here your Anae soppu huli sambar is ready to taste.
