About Mustard Seeds (Small)
Mustard seeds are the small round seeds of various mustard plants. The seeds are usually about 1 to 2 millimetres (0.039 to 0.079 in) in diameter and may be colored from yellowish white to black. Grinding and mixing the seeds with water, vinegar or other liquids creates the yellow condiment known as prepared mustard.

Storage & Uses
Mustard should be stored below 18˚C and, for safe storage, should be kept as cool as possible. When first placed in the bin, the seed will still have a relatively high respiration rate for up to six weeks. Heat and moisture, byproducts of respiration, will increase the risk of spoilage.

Shelf-Life
Properly stored, mustard seed will generally stay at best quality for about 3 to 4 years. To maximize the shelf life of mustard seed purchased in bulk, and to better retain flavor and potency, store in containers with tight-fitting lids.

Storage Tips
Keep mustard seeds in a dark, dry place for up to a year. Keep dry mustard in a dark, dry place for up to six months. Once opened, prepared mustard should be refrigerated for up to two years.

Mustard stored for a long period should be kept at less than 18ºC. Mustard stored for a long period should be kept below nine per cent moisture. When drying mustard seed, do not exceed 65ºC (150ºF) air temperature and 45ºC (113ºF) seed temperature.
