About Ooty Beetroot
Freshly harvested from the Queen of Hill station - Ooty in Southern India, Beetroot has an incredibly rich color with striking dark and light pink stripes, making a colorful addition to any dish. They are fresh, sweet and crispy you can even enjoy them raw.

Storage and Uses
For Ooty beetroot trim the leaves 2 inches from the root soon after you buy them as they sap the moisture from the beetroot.
The root bulbs should also be put into a bag and can be stored in the refrigerator for a maximum of 7 to 10 days.
They are used to prepare curries, chutneys and raithas.

Storage Tips
Keep raw beetroot in a cool, dry place, away from direct sunlight for 3-4 days. Cooked beetroot should be stored in the fridge for up to 3 days. To prepare: Carefully twist off the roots, about 3cm from the end, do not cut them off or they will 'bleed' during cooking and loose their distinctive color.
Storage Temperature
Beet root is hardy to low temperature and prefers cool climate. It requires abundant sunshine for development of storage root.
