About Maize
Maize or Indian corn is Zea mays, a member of the grass family Poaceae. It is a cereal grain which was first grown by people in ancient Central America. Approximately 1 billion tonnes are harvested every year.

Storage & Uses
Maize can only be stored well if it has been properly dried. When drying maize in the sun or over a fire turn it to ensure even drying end to prevent overheating. Dry it until a moisture content of below 13% is achieved, which is suitable for long-term storage.
Shelf-Life
Micronized maize flour can be stored for 60 days under accelerated conditions and 120 days at ambient conditions. Micronization of maize grain effectively inactivated the enzyme activity and extended the storage period of whole maize flour by 2–4 months.
Storage Tips
In the drier areas maize can be kept on the cob for longer before it is shelled and stored. Stored maize must be kept in any outside structure with a rainproof roof that enables side ventilation or in commercially available steel or plastic tank conversions that allow for efficient storage.
Storage Temperature
An average moisture value of maize grain stored in the floored warehouse was 13.7%, but an average temperature inside the warehouse was 21.9°C, however extraneous conditions during the storage were unchanged. Average value of extraneous moisture was 86.5% and an average value of atmospheric temperature was 9.17°C.
