About Litchi
The litchi fruits are round, oval or heart-shaped, with a fleshy interior. The hard outer skin of this fruit is green when immature and turns pinkish-red upon ripening.This covering is however not edible and is removed before eating the pulp of the fruit.Inside, the litchi fruit’s flesh is white to translucent, with many seeds or arils and a wonderful juicy smell with a refreshing sweet taste.

Litchi Raita


Recipe:

Ingredients
2 cup lychee
1 1/2 cup yoghurt (curd)
1/2 teaspoon mustard seeds
4 leaves curry leaves
1 carrot
salt as required
1 teaspoon refined oil
red chilli powder as required


Method
Step 1
To prepare this easy raita, peel the litchis and remove their seeds. Grate the carrot properly. Keep them aside.
Step 2
Blend sugar and yogurt in a food processor. Transfer the blended mixture to a large bowl.
Step 3
Add salt as per your taste and grated carrot to this mixture and also add the litchis.
Step 4
Heat oil over a medium-low flame in a pan and add mustard seeds to it.
Step 5
Add curry leaves and red chilli powder to it and keep stirring.
Step 6
Then, add the curd mixture and cook for 2-3 minutes. Remove and let it cool down. Serve chilled
