Storage & uses
When it comes to storing ground cinnamon, it's no different than storing other ground spices, like chili powder. That means you should keep it in a dark and cool place, away from sunlight and heat sources. For an unopened package, the pantry is probably the best choice.
Shelf-life
Spices that are finely ground, like nutmeg, cinnamon, cumin, and curry, last around 2-3 years. Whole spices, like cloves and cinnamon sticks, that are dried in their natural whole form have a longer shelf life. They can be kept for up to 4-5 years before they become stale.
Storage tips
Dry spices are best stored in their original containers in a cool dark area like a pantry where they will remain dry, away from sources of heat. Cinnamon does degrade over time and degrades faster depending on the surface area - thus whole sticks last much longer than ground.
Storage temperature
On the storage of cinnamon essential oil microcapsules at a temperature of 30 to 70 °C for 4 weeks, the higher the temperature and the longer the storage time will cause a decrease in whiteness degree, total oil, surface oil and entrapped oil.
