About Chinese Cabbage
Chinese cabbage is an exotic variety of lettuce which can be identified easily because of its long leaves and a light, ice green and white colour. It tastes slightly bitter when eaten raw but have a more spongy texture rather than the usual crunchiness of other varieties of lettuce or cabbage

Storage & Uses
To store cabbage in the refrigerator, remove loose leaves and clip the cabbage so a short stem remains, then wrap the head in a damp paper towel, and place it in a perforated plastic bag in the vegetable crisper section of the refrigerator.

Chinese cabbage can be stored from 2 to 6 months, depending on cultivar, at 0°C to 2.5°C (32°F to 36°F). Deterioration of cabbage during storage is associated with stem or seed stalk growth (bolting), root growth, internal breakdown, leaf abscission, discoloration, decay and black speck.

To store cabbage, always remove any wilted or insect-damaged outside leaves and store in a plastic bag in the refrigerator. The recommended methods of preserving green and Chinese cabbage are freezing or as a sauerkraut product.
